Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 sweet potatoes, peeled and cubed
  • 6 cups vegetable broth
  • 4 cups kale, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until softened.
  3. Add cubed sweet potatoes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, until sweet potatoes are tender.
  5. Add chopped kale, salt, and pepper. Cook for another 5 minutes.
  6. Serve hot and enjoy!
