Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add cubed sweet potatoes and vegetable broth. Bring to a boil.
Reduce heat and simmer for 20 minutes, until sweet potatoes are tender.
Add chopped kale, salt, and pepper. Cook for another 5 minutes.
Serve hot and enjoy!
