Ingredients 

Main Ingredients

  • 1 cup kale, chopped
  • 1 cup mushrooms, sliced
  • 1 pie crust store-bought or homemade
  • 4 eggs
  • 1 cup milk
  • ½ cup cheese, shredded cheddar or your choice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, sauté the kale and mushrooms until tender.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  4. Place the pie crust in a pie dish and spread the sautéed kale and mushrooms evenly over the crust.
  5. Pour the egg mixture over the vegetables and sprinkle with shredded cheese.
  6. Bake in the preheated oven for 45 minutes or until the quiche is set and golden brown.
  7. Let the quiche cool for a few minutes before slicing and serving.
