Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 green onions, chopped for garnish

Instructions 

  1. 1. Heat a large pot over medium heat. Add the chicken and sausage, cooking until browned.
  2. 2. Add the bell pepper, onion, and garlic. Cook until the vegetables are tender.
  3. 3. Stir in the rice, chicken broth, diced tomatoes, Cajun seasoning, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked.
  5. 5. Garnish with green onions before serving.
