Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 cup Milk
  • ¼ cup Vegetable oil
  • 1 Egg beaten
  • 1 cup Cheddar cheese shredded
  • 2 Jalapenos diced

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, and beaten egg.
  4. Combine wet and dry ingredients, then fold in cheddar cheese and diced jalapenos.
  5. Pour batter into a greased baking dish and bake for 25 minutes or until golden brown.
  6. Let cool slightly before serving.
