Jalapeño Cauliflower Mac & Cheese
A spicy twist on classic mac & cheese with a healthy addition of cauliflower.

Main Ingredients
- 1 medium cauliflower, cut into florets
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons flour
- 2 jalapeños, diced
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Cook macaroni according to package instructions. Drain and set aside.
Steam cauliflower florets until tender, about 10 minutes. Mash slightly.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
Gradually whisk in milk, cooking until thickened.
Add cheese, stirring until melted and smooth.
Mix in mashed cauliflower, cooked macaroni, and diced jalapeños. Season with salt and pepper.
Transfer to a baking dish and bake for 20 minutes or until golden and bubbly.
