Ingredients 

Main Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 jalapeños, diced
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook macaroni according to package instructions. Drain and set aside.
  3. Steam cauliflower florets until tender, about 10 minutes. Mash slightly.
  4. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  5. Gradually whisk in milk, cooking until thickened.
  6. Add cheese, stirring until melted and smooth.
  7. Mix in mashed cauliflower, cooked macaroni, and diced jalapeños. Season with salt and pepper.
  8. Transfer to a baking dish and bake for 20 minutes or until golden and bubbly.
