Ingredients 

Meatballs

  • ½ lb ground beef
  • ½ lb ground pork
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg beaten
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Soup

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 8 cups chicken broth
  • 1 cup small pasta like acini di pepe
  • 6 oz baby spinach or escarole
  • ¼ cup grated Parmesan cheese for serving

Instructions 

  1. 1. In a bowl, mix together all meatball ingredients. Form into small meatballs.
  2. 2. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  3. 3. Add chicken broth and bring to a boil. Add meatballs and pasta. Cook until meatballs are cooked through and pasta is tender.
  4. 4. Stir in spinach and cook until wilted. Serve with grated Parmesan cheese.
