Meatballs
- ½ lb ground beef
- ½ lb ground pork
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 egg beaten
- 2 cloves garlic minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
Soup
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 8 cups chicken broth
- 1 cup small pasta like acini di pepe
- 6 oz baby spinach or escarole
- ¼ cup grated Parmesan cheese for serving
1. In a bowl, mix together all meatball ingredients. Form into small meatballs.
2. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
3. Add chicken broth and bring to a boil. Add meatballs and pasta. Cook until meatballs are cooked through and pasta is tender.
4. Stir in spinach and cook until wilted. Serve with grated Parmesan cheese.
