Main Ingredients
- 4 cups stale bread, cubed preferably Italian bread
- 2 cups cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, thinly sliced
- ¼ cup fresh basil, chopped
- ¼ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- to taste salt and pepper
1. In a large mixing bowl, combine the cubed bread, cherry tomatoes, cucumber, red onion, and fresh basil.
2. Drizzle the olive oil and red wine vinegar over the salad.
3. Season with salt and pepper to taste.
4. Toss everything together until well combined.
5. Let the salad sit for about 10 minutes before serving to allow the flavors to meld.
