Ingredients 

Main Ingredients

  • 2 cups Cooked rice preferably day-old
  • 1 cup Pineapple chunks fresh or canned
  • 1 cup Mixed vegetables carrots, peas, corn
  • 2 tablespoon Soy sauce
  • 2 tablespoon Vegetable oil
  • 2 cloves Garlic minced
  • 2 pcs Eggs beaten
  • 1 tablespoon Green onions chopped
  • to taste Salt and pepper

Instructions 

  1. Heat the vegetable oil in a wok over medium-high heat.
  2. Add the minced garlic and stir-fry until fragrant.
  3. Add the mixed vegetables and stir-fry for 2-3 minutes.
  4. Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  5. Add the cooked rice and pineapple chunks to the wok. Stir everything together.
  6. Pour in the soy sauce and mix well. Cook for another 2-3 minutes until everything is heated through.
  7. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
