Ingredients 

Main Ingredients

  • 1 cup lentils rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper

Instructions 

  1. 1. Turn on the Instant Pot and select the sauté function. Add a bit of oil and sauté the chopped onion and minced garlic until they are soft.
  2. 2. Add the chopped carrots and celery, and continue to sauté for another 5 minutes.
  3. 3. Add the rinsed lentils, vegetable broth, cumin, paprika, salt, and black pepper. Stir to combine.
  4. 4. Close the lid of the Instant Pot and set it to high pressure for 15 minutes.
  5. 5. Once the cooking time is complete, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  6. 6. Open the lid, stir the soup, and adjust seasoning if needed. Serve hot.
