Main Ingredients
- 500 g Chicken Breast cut into bite-sized pieces
- 1 large Onion finely chopped
- 2 cloves Garlic minced
- 1 tablespoon Ginger grated
- 2 tablespoon Curry Powder
- 1 teaspoon Turmeric
- 400 ml Coconut Milk
- 1 cup Tomatoes chopped
- 1 teaspoon Salt to taste
- 1 tablespoon Vegetable Oil
Heat oil in a large pot over medium heat.
Add chopped onions and sauté until golden brown.
Add minced garlic and grated ginger, cook for another minute.
Add curry powder and turmeric, stir well.
Add chicken pieces, cook until they are no longer pink.
Add chopped tomatoes and coconut milk, bring to a simmer.
Reduce heat and let it cook for 20-25 minutes, or until the chicken is cooked through.
Season with salt to taste. Serve hot with rice or naan.
