Main Ingredients
- 4 corn tortillas
- 4 large eggs
- 1 cup refried beans
- 1 cup tomato sauce
- ½ cup chopped onions
- 1 clove garlic, minced
- 1 tablespoon olive oil
- ¼ cup chopped cilantro
- to taste salt and pepper
1. Heat the olive oil in a skillet over medium heat. Add the onions and garlic, and cook until softened.
2. Add the tomato sauce to the skillet and simmer for about 5 minutes. Season with salt and pepper.
3. In another skillet, heat the tortillas until they are warm and slightly crispy.
4. Cook the eggs to your liking (sunny side up is traditional).
5. To assemble, spread a layer of refried beans on each tortilla, top with a cooked egg, and then spoon the tomato sauce over the top. Garnish with chopped cilantro.
