Honeynut Squash Risotto

Ingredients 

Main Ingredients

  • 2 cups Arborio rice
  • 1 small Honeynut squash peeled and diced
  • 1 small Onion finely chopped
  • 4 cups Chicken broth warmed
  • ½ cup Parmesan cheese grated
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Heat the olive oil and butter in a large pot over medium heat.
  2. 2. Add the chopped onion and cook until translucent.
  3. 3. Add the diced honeynut squash and cook for about 5 minutes.
  4. 4. Stir in the Arborio rice and cook for 2 minutes, coating the rice with the oil and butter.
  5. 5. Begin adding the warm chicken broth one cup at a time, stirring constantly until the liquid is absorbed before adding more.
  6. 6. Continue this process until the rice is creamy and cooked through, about 20-25 minutes.
  7. 7. Stir in the grated Parmesan cheese and season with salt and black pepper to taste.
  8. 8. Serve hot and enjoy!
