Ingredients 

Vegetables

  • 2 cups broccoli florets
  • 1 cup baby carrots
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine broccoli, carrots, and bell peppers.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  4. Pour the mixture over the vegetables and toss to coat.
  5. Spread the vegetables on a baking sheet in a single layer.
  6. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
