Honey Balsamic Vegetables Recipe
A delicious and healthy side dish of roasted vegetables with a honey balsamic glaze.

Vegetables
- 2 cups broccoli florets
- 1 cup baby carrots
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
Dressing
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Preheat oven to 400°F (200°C).
In a large bowl, combine broccoli, carrots, and bell peppers.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
Pour the mixture over the vegetables and toss to coat.
Spread the vegetables on a baking sheet in a single layer.
Roast in the preheated oven for 20-25 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
