- 1 lb carrots peeled and cut into sticks
- 2 tablespoon olive oil
- 2 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- 0.5 teaspoon black pepper freshly ground
Preheat oven to 400°F (200°C).
In a mixing bowl, toss carrots with olive oil, honey, balsamic vinegar, salt, and pepper.
Spread carrots on a baking sheet in a single layer.
Roast in preheated oven for 20 minutes, or until tender and caramelized, stirring halfway through.
