Granola Mix
- 3 cups rolled oats
- 1 cup nuts (almonds, walnuts, or pecans) chopped
- ½ cup honey or maple syrup
- ¼ cup coconut oil melted
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 cup dried fruit (raisins, cranberries, or apricots)
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the oats and chopped nuts.
In a small saucepan over low heat, warm the honey or maple syrup and coconut oil until melted and combined. Remove from heat and stir in the vanilla extract and salt.
Pour the liquid mixture over the oats and nuts, stirring to coat evenly.
Spread the mixture evenly on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown.
Remove from oven and let cool completely. Stir in the dried fruit.
Store in an airtight container for up to two weeks.
