Ingredients

  • 4 pieces Chicken Breasts
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Mixed Herbs (Thyme, Rosemary, Parsley) Chopped

Vegetables

  • 2 cups Carrots Sliced
  • 2 cups Broccoli Florets
  • 2 cups Bell Peppers Sliced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, salt, pepper, and mixed herbs.
  3. Coat the chicken breasts with the herb mixture.
  4. Place the chicken on a baking sheet.
  5. Arrange the sliced vegetables around the chicken.
  6. Roast in the preheated oven for 30 minutes or until the chicken is cooked through and the vegetables are tender.
  7. Serve hot and enjoy!
