Herb-crusted Chicken with Vegetables

Main Ingredients
- 4 pieces Chicken Breasts
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 tablespoon Mixed Herbs (Thyme, Rosemary, Parsley) Chopped
Vegetables
- 2 cups Carrots Sliced
- 2 cups Broccoli Florets
- 2 cups Bell Peppers Sliced
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine olive oil, salt, pepper, and mixed herbs.
Coat the chicken breasts with the herb mixture.
Place the chicken on a baking sheet.
Arrange the sliced vegetables around the chicken.
Roast in the preheated oven for 30 minutes or until the chicken is cooked through and the vegetables are tender.
