Ingredients

  • 4 Heirloom tomatoes sliced
  • 8 oz Fresh mozzarella sliced
  • 1 cup Fresh basil leaves
  • ¼ cup Fresh mint leaves
  • ¼ cup Pine nuts toasted
  • ½ cup Olive oil
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed
  • To taste Salt and pepper

Instructions 

  1. 1. Arrange the sliced heirloom tomatoes and mozzarella on a serving platter.
  2. 2. In a blender, combine the basil, mint, pine nuts, olive oil, garlic, and lemon juice. Blend until smooth.
  3. 3. Season the pesto with salt and pepper to taste.
  4. 4. Drizzle the mint pesto over the tomatoes and mozzarella.
  5. 5. Serve immediately and enjoy!
