Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Jalapeño, chopped
  • 4 cups Spinach
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion, garlic, and jalapeño. Sauté until softened.
  3. 3. Add spinach and cook until wilted.
  4. 4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. 5. Remove from heat and let cool slightly. Blend the soup until smooth.
  6. 6. Return the soup to the pot, stir in coconut milk, salt, and pepper. Heat through before serving.
