Ingredients 

Main Ingredients

  • 4 sweet potatoes medium-sized
  • 1 cup black beans cooked
  • 1 cup corn cooked
  • 1 avocado diced
  • ½ cup Greek yogurt
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • ¼ cup cilantro chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes. Prick them a few times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45 minutes or until tender.
  4. While the sweet potatoes are baking, mix the black beans, corn, cumin, paprika, salt, and pepper in a bowl.
  5. Once the sweet potatoes are done, let them cool slightly, then cut them open and fluff the insides with a fork.
  6. Top the sweet potatoes with the black bean mixture, avocado, Greek yogurt, and cilantro.
