Ingredients 

Main Ingredients

  • 3 cups Rolled oats
  • 1 cup Nuts (almonds, walnuts, etc.) chopped
  • ½ cup Honey or maple syrup
  • ¼ cup Coconut oil melted
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • ½ teaspoon Salt
  • 1 cup Dried fruit (raisins, cranberries, etc.)

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats and chopped nuts.
  3. In a small saucepan over low heat, warm the honey (or maple syrup) and coconut oil until melted and combined. Remove from heat and stir in the vanilla extract, cinnamon, and salt.
  4. Pour the liquid mixture over the oats and nuts, stirring well to coat.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.
  7. Remove from the oven and let cool completely. Stir in the dried fruit.
  8. Store in an airtight container for up to two weeks.
