  • 3 ripe bananas mashed
  • 1 large egg
  • cup honey
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon

Instructions 

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
  2. In a large mixing bowl, whisk together the mashed bananas, egg, honey, milk, and vanilla extract.
  3. Add the whole wheat flour, rolled oats, baking powder, baking soda, salt, and cinnamon. Stir until just combined.
  4. Divide the batter evenly among the muffin cups.
  5. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
