Ingredients

  • 1.5 cups whole wheat flour
  • 1 cup rolled oats
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 eggs
  • 1 cup unsweetened applesauce
  • 0.5 cup honey
  • 0.25 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup diced apples

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, ground cinnamon, and salt.
  3. In another bowl, beat the eggs. Add the applesauce, honey, milk, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
