Ingredients 

Main Ingredients

  • 2 cups Butternut Squash, diced
  • 1 cup Brussels Sprouts, halved
  • 1 cup Red Onion, sliced
  • 2 tablespoon Olive Oil
  • 2 tablespoon Harissa Paste
  • 4 Pita Breads
  • 1 cup Hummus
  • 1 cup Arugula

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss butternut squash, Brussels sprouts, and red onion with olive oil and harissa paste.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
  4. Warm pita breads in the oven for the last 5 minutes of the vegetable roasting time.
  5. Spread hummus inside each pita, then fill with roasted vegetables and arugula.
