Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 egg
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, mix the milk, vegetable oil, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced ham and shredded cheddar cheese.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  7. Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
