Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into chunks
  • 2 tablespoon Olive oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 bottle Guinness beer
  • 2 tablespoon Tomato paste
  • 4 large Carrots, chopped
  • 4 large Potatoes, chopped
  • 2 teaspoon Thyme
  • 2 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Heat olive oil in a Dutch oven over medium-high heat. Brown the beef chunks in batches, setting them aside once browned.
  2. 2. In the same pot, add the chopped onion and garlic. Cook until softened.
  3. 3. Add the beef back to the pot along with the beef broth, Guinness beer, and tomato paste. Stir well.
  4. 4. Add the chopped carrots, potatoes, thyme, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for about 2 hours, or until the beef is tender.
  5. 5. Adjust seasoning if necessary. Serve hot.
