Ingredients 

Main Ingredients

  • 4 pieces Beyond Burgers
  • 2 pieces Avocados
  • 1 piece Lime juiced
  • 0.5 piece Red Onion diced
  • 0.25 cup Cilantro chopped
  • 1 piece Jalapeño minced
  • 2 pieces Sweet Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. Cut sweet potatoes into wedges.
  3. Toss sweet potatoes with olive oil, paprika, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet and bake for 25-30 minutes.
  5. While sweet potatoes are baking, mash avocados in a bowl.
  6. Add lime juice, diced red onion, chopped cilantro, and minced jalapeño to the mashed avocados. Mix well.
  7. Cook Beyond Burgers according to package instructions.
  8. Top cooked burgers with guacamole and serve with sweet potato wedges.
