  • 4 medium zucchinis
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 lemon zested and juiced
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh mint

Instructions 

  1. Preheat grill to medium-high heat.
  2. Slice zucchinis lengthwise into ¼ inch thick slices.
  3. Brush zucchini slices with olive oil and season with salt and pepper.
  4. Grill zucchini for 3-4 minutes on each side until tender and grill marks appear.
  5. In a bowl, mix Greek yogurt, lemon zest, and lemon juice.
  6. Arrange grilled zucchini on a serving platter, drizzle with lemon yogurt, and sprinkle with feta and mint.
