  • 2 cups Bell Peppers, sliced
  • 1 cup Red Onion, sliced
  • 1 cup Zucchini, sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 8 pieces Taco Shells

Instructions 

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, toss the bell peppers, red onion, and zucchini with olive oil, cumin, paprika, and salt.
  3. Grill the vegetables for about 10 minutes, turning occasionally, until they are tender and slightly charred.
  4. Warm the taco shells on the grill for about 1 minute per side.
  5. Fill the taco shells with the grilled vegetables and serve immediately.
