Ingredients 

Main Ingredients

  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 slices whole-grain bread
  • 4 tablespoons pesto
  • 4 slices mozzarella cheese

Instructions 

  1. Preheat grill to medium-high heat.
  2. Toss zucchini, bell peppers, and onion with olive oil, salt, and pepper.
  3. Grill veggies until tender, about 5-7 minutes.
  4. Spread pesto on one side of each bread slice.
  5. Layer grilled veggies and mozzarella on two bread slices, then top with remaining bread slices.
  6. Grill sandwiches until bread is toasted and cheese is melted, about 3 minutes per side.
