  • 2 cups Bell peppers, sliced
  • 1 cup Zucchini, sliced
  • 1 cup Red onion, sliced
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 8 pieces Tortillas

Instructions 

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the bell peppers, zucchini, and red onion with olive oil, cumin, and chili powder.
  3. Grill the vegetables for about 5-7 minutes, until tender and slightly charred.
  4. Warm the tortillas on the grill for about 1 minute on each side.
  5. Assemble the tacos by placing the grilled vegetables on the tortillas. Serve immediately.
