Grilled Vegetable Hummus Sandwich
A delicious and healthy grilled vegetable hummus sandwich.

Main Ingredients
- 1 cup Hummus
- 1 medium Zucchini sliced
- 1 medium Red Bell Pepper sliced
- 1 small Red Onion sliced
- 4 slices Whole Grain Bread
- 2 tablespoon Olive Oil
- to taste Salt
- to taste Black Pepper
1. Preheat the grill pan over medium heat.
2. Brush the zucchini, red bell pepper, and red onion slices with olive oil. Season with salt and black pepper.
3. Grill the vegetables for about 5-7 minutes on each side, until tender and slightly charred.
4. Toast the whole grain bread slices until golden brown.
5. Spread hummus on each slice of toasted bread.
6. Layer the grilled vegetables on two slices of the bread. Top with the remaining slices to form sandwiches.
7. Serve immediately and enjoy!
