Grilled Vegetable Goat Cheese Flatbread

- 2 pieces Flatbread
- 1 cup Bell Peppers, sliced
- 1 cup Zucchini, sliced
- 1 cup Red Onion, sliced
- 4 oz Goat Cheese, crumbled
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Preheat your grill to medium-high heat.
In a mixing bowl, toss the bell peppers, zucchini, and red onion with olive oil, salt, and black pepper.
Grill the vegetables for about 5-7 minutes until tender and slightly charred.
Place the flatbreads on a baking sheet. Top each with the grilled vegetables and crumbled goat cheese.
Place the baking sheet on the grill and cook for another 5-7 minutes until the flatbreads are crispy and the cheese is melted.
Remove from the grill, slice, and serve immediately.
