Ingredients

  • 2 pieces Flatbread
  • 1 cup Bell Peppers, sliced
  • 1 cup Zucchini, sliced
  • 1 cup Red Onion, sliced
  • 4 oz Goat Cheese, crumbled
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, toss the bell peppers, zucchini, and red onion with olive oil, salt, and black pepper.
  3. Grill the vegetables for about 5-7 minutes until tender and slightly charred.
  4. Place the flatbreads on a baking sheet. Top each with the grilled vegetables and crumbled goat cheese.
  5. Place the baking sheet on the grill and cook for another 5-7 minutes until the flatbreads are crispy and the cheese is melted.
  6. Remove from the grill, slice, and serve immediately.
