Ingredients 

Main Ingredients

  • 1 block firm tofu pressed and sliced
  • 8 pieces corn tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt

Avocado Cashew Cream

  • 1 cup cashews soaked in water for 2 hours
  • 1 piece avocado peeled and pitted
  • 1 tablespoon lime juice freshly squeezed
  • 1 clove garlic minced
  • 0.5 cup water
  • 0.5 teaspoon salt

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. In a bowl, mix olive oil, chili powder, cumin, and salt. Brush the tofu slices with this mixture.
  3. 3. Grill the tofu slices for about 4-5 minutes on each side until they have grill marks and are heated through.
  4. 4. While the tofu is grilling, blend all the avocado cashew cream ingredients in a blender until smooth.
  5. 5. Warm the corn tortillas on the grill for about 30 seconds on each side.
  6. 6. Assemble the tacos by placing grilled tofu slices on the tortillas and topping with avocado cashew cream.
