Ingredients 

Main Ingredients

  • 4 fillets Salmon about 6 oz each
  • 1 bunch Beet Greens washed and chopped
  • 1 cup Quinoa rinsed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper freshly ground
  • 1 tablespoon Lemon Juice freshly squeezed

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Season the salmon fillets with salt, pepper, and a drizzle of olive oil.
  3. Grill the salmon for about 4-5 minutes on each side, until cooked through.
  4. In a saucepan, cook the quinoa according to package instructions.
  5. In a mixing bowl, toss the beet greens with lemon juice, a pinch of salt, and a drizzle of olive oil.
  6. Serve the grilled salmon over a bed of quinoa and beet greens.
