Ingredients 

Main Ingredients

  • 4 fillets Salmon skinless
  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Fresh Dill chopped

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
  3. 3. While quinoa is cooking, season salmon fillets with salt and pepper. Grill salmon for 4-5 minutes on each side or until fully cooked.
  4. 4. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olive oil, lemon juice, and fresh dill. Toss to combine.
  5. 5. Serve the quinoa salad topped with grilled salmon fillets.
