  • 1 large eggplant sliced
  • 2 medium zucchini sliced
  • 1 large red bell pepper sliced
  • 1 large yellow bell pepper sliced
  • 1 large red onion sliced
  • 4 slices crusty bread
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 clove garlic minced
  • 2 tablespoons fresh basil chopped

Instructions 

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, toss the sliced eggplant, zucchini, bell peppers, and red onion with olive oil, salt, and black pepper.
  3. Grill the vegetables for about 5-7 minutes on each side, until they are tender and have nice grill marks.
  4. Grill the slices of crusty bread for about 2 minutes on each side, until they are toasted.
  5. Rub the grilled bread with the minced garlic.
  6. Top each slice of bread with the grilled vegetables and sprinkle with chopped fresh basil.
  7. Serve immediately and enjoy!
