Ingredients 

Main Ingredients

  • 2 lbs small potatoes halved
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Scallion Vinaigrette

  • 4 stalks scallions chopped
  • 3 tablespoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • ½ cup olive oil
  • 1 teaspoon honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Toss the halved potatoes with olive oil, salt, and pepper.
  3. Grill the potatoes for about 20 minutes, turning occasionally, until tender and charred.
  4. In a mixing bowl, whisk together the chopped scallions, red wine vinegar, Dijon mustard, olive oil, honey, salt, and pepper to make the vinaigrette.
  5. Toss the grilled potatoes with the scallion vinaigrette.
  6. Serve warm or at room temperature.
