Grilled Peach Salad With Mint Pesto
A refreshing summer salad with grilled peaches, mixed greens, feta cheese, and a mint pesto dressing.

Salad Ingredients
- 4 ripe peaches, halved and pitted
- 2 cups mixed greens
- ¼ cup crumbled feta cheese
- ¼ cup chopped walnuts
- ¼ cup fresh mint leaves
- ¼ cup olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Preheat the grill to medium-high heat.
Brush the peach halves with a bit of olive oil.
Grill the peaches for about 3-4 minutes on each side until grill marks appear.
In a blender, combine mint leaves, olive oil, lemon juice, salt, and pepper to make the mint pesto.
In a large bowl, toss the mixed greens with the mint pesto.
Arrange the grilled peaches on top of the greens.
Sprinkle with crumbled feta cheese and chopped walnuts.
Serve immediately.
