Ingredients 

Salad Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 cups mixed greens
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped walnuts
  • ¼ cup fresh mint leaves
  • ¼ cup olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the peach halves with a bit of olive oil.
  3. Grill the peaches for about 3-4 minutes on each side until grill marks appear.
  4. In a blender, combine mint leaves, olive oil, lemon juice, salt, and pepper to make the mint pesto.
  5. In a large bowl, toss the mixed greens with the mint pesto.
  6. Arrange the grilled peaches on top of the greens.
  7. Sprinkle with crumbled feta cheese and chopped walnuts.
  8. Serve immediately.
