Ingredients 

Chicken and Marinade

  • 4 pieces Chicken breasts
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Kale Pesto

  • 2 cups Kale leaves stems removed
  • ½ cup Parmesan cheese grated
  • ¼ cup Pine nuts toasted
  • 1 clove Garlic minced
  • ½ cup Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • ½ teaspoon Salt

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Rub the chicken breasts with olive oil, salt, and pepper.
  3. 3. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  4. 4. While the chicken is grilling, prepare the kale pesto. In a blender, combine kale, Parmesan cheese, pine nuts, garlic, olive oil, lemon juice, and salt. Blend until smooth.
  5. 5. Serve the grilled chicken with a generous dollop of kale pesto on top.
