Ingredients 

Chicken and Marinade

  • 4 pieces Chicken Breasts
  • 2 tablespoon Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt

Romesco Sauce

  • 1 cup Roasted Red Peppers
  • 0.5 cup Almonds toasted
  • 1 clove Garlic
  • 2 tablespoon Red Wine Vinegar
  • 0.25 cup Olive Oil

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. In a bowl, mix olive oil, paprika, and salt. Rub this mixture over the chicken breasts.
  3. 3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. 4. While the chicken is grilling, prepare the Romesco sauce. In a blender, combine roasted red peppers, toasted almonds, garlic, red wine vinegar, and olive oil. Blend until smooth.
  5. 5. Serve the grilled chicken with a generous spoonful of Romesco sauce on top.
