Ingredients

  • 2 cups quinoa cooked
  • 2 pieces chicken breasts grilled and sliced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  2. 2. Grill the chicken breasts until fully cooked, then slice them.
  3. 3. In a large mixing bowl, combine the cooked quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. 4. Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss to combine.
