  • 4 pieces Chicken Breasts boneless, skinless
  • 2 cups Kale chopped
  • ½ cup Parmesan Cheese grated
  • ¼ cup Olive Oil
  • 2 cloves Garlic minced
  • ¼ cup Pine Nuts toasted
  • to taste Salt and Pepper

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper.
  3. 3. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  4. 4. While the chicken is grilling, prepare the kale pesto. In a blender, combine kale, Parmesan cheese, olive oil, garlic, pine nuts, salt, and pepper. Blend until smooth.
  5. 5. Once the chicken is done, let it rest for a few minutes. Serve with a generous spoonful of kale pesto on top.
