  • 2 pieces Chicken Breasts boneless, skinless
  • 4 pieces Pickled Eggs
  • 1 head Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • ½ cup Red Onion sliced
  • ¼ cup Olive Oil
  • 2 tablespoon Balsamic Vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper.
  3. 3. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  4. 4. Let the chicken rest for 5 minutes, then slice it.
  5. 5. In a large mixing bowl, combine the lettuce, cherry tomatoes, red onion, and pickled eggs.
  6. 6. Add the sliced chicken to the salad.
  7. 7. Drizzle olive oil and balsamic vinegar over the salad and toss to combine.
