Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 1 piece Avocado sliced
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper.
  3. 3. Grill the chicken for 5-7 minutes on each side, or until fully cooked.
  4. 4. Let the chicken rest for a few minutes, then slice it.
  5. 5. In a mixing bowl, combine mixed greens, cherry tomatoes, red onion, and avocado.
  6. 6. Add the sliced chicken on top of the salad.
  7. 7. Drizzle with olive oil and lemon juice.
  8. 8. Sprinkle with feta cheese and serve immediately.
