Ingredients

  • 2 large Bell Peppers red and yellow, sliced
  • 1 can Chickpeas drained and rinsed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 tablespoon Lemon Juice freshly squeezed
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Toss the sliced bell peppers with 1 tablespoon of olive oil, salt, and black pepper.
  3. 3. Grill the bell peppers for about 5-7 minutes until they are tender and have grill marks.
  4. 4. In a mixing bowl, combine the grilled bell peppers, chickpeas, remaining olive oil, lemon juice, and chopped parsley.
  5. 5. Toss everything together and adjust seasoning if needed. Serve immediately.
