Ingredients

  • 2 Avocados halved and pitted
  • 1 cup Tomatoes diced
  • ½ cup Red Onion finely chopped
  • 1 Jalapeño seeded and minced
  • ¼ cup Cilantro chopped
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Brush the avocado halves with a bit of oil and place them on the grill, cut side down. Grill for about 5 minutes until grill marks appear.
  3. In a mixing bowl, combine the tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well.
  4. Remove the avocados from the grill and fill the cavities with the veggie ceviche mixture.
  5. Serve immediately and enjoy!
