Ingredients 

Main Ingredients

  • 2 cups green garbanzo beans fresh or frozen
  • 2 medium leeks cleaned and sliced
  • 4 cups vegetable broth
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add leeks and garlic, sauté until soft.
  3. 3. Add green garbanzo beans and vegetable broth. Bring to a boil.
  4. 4. Reduce heat and simmer for 20 minutes.
