Ingredients 

Main Ingredients

  • 300 g Green beans trimmed
  • 400 g Purple potatoes cut into chunks
  • 1 unit Red onion sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt and pepper

Instructions 

  1. 1. Boil the purple potatoes in a pot of salted water for about 15 minutes or until tender. Drain and set aside.
  2. 2. In the same pot, blanch the green beans for 3-4 minutes until tender-crisp. Drain and rinse under cold water to stop cooking.
  3. 3. In a large bowl, combine the potatoes, green beans, and sliced red onion.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  5. 5. Pour the dressing over the salad and toss to coat evenly. Serve immediately or chill in the fridge for later.
