Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion finely chopped
  • ½ cup kalamata olives pitted and halved
  • ½ cup feta cheese crumbled

Dressing

  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it cool.
  3. 3. In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  4. 4. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
