Ingredients 

Crust

  • 1 ½ cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ teaspoon Ground ginger
  • ½ teaspoon Ground cinnamon
  • ½ cup Melted butter

Filling

  • 24 oz Cream cheese softened
  • 1 cup Sugar
  • ¼ cup Molasses
  • 4 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg
  • ½ teaspoon Ground cloves

Instructions 

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, sugar, ground ginger, ground cinnamon, and melted butter. Press mixture into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add molasses, eggs, vanilla extract, ground ginger, ground cinnamon, ground nutmeg, and ground cloves. Beat until well combined.
  4. Pour filling over crust. Bake for 60 minutes or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
